  • 2 boneless chicken breasts
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 4 sub rolls
  • Olive oil
  • Salt and pepper
  • Fresh basil (optional)

Instructions

  1. Preheat the oven: Set your oven to 375°F (190°C) to ensure it’s hot and ready for the baking process.
  2. Prepare the chicken: Flatten the chicken breasts to about 1-inch thickness. This helps them cook evenly. Season both sides with salt and pepper to taste.
  3. Bread the chicken: In a bowl, combine the breadcrumbs and grated Parmesan cheese. Coat each chicken breast thoroughly with the breadcrumb mixture, pressing gently to ensure the coating adheres well.
  4. Cook the chicken: Heat a generous amount of olive oil in a skillet over medium heat. Add the chicken breasts and cook for about 4-5 minutes on each side or until they achieve a beautiful golden-brown crust.
  5. Prepare for baking: Transfer the cooked chicken breasts to a baking sheet. Top each piece with a generous amount of marinara sauce, then sprinkle with shredded mozzarella cheese.
  6. Bake the chicken: Place the baking sheet in the preheated oven and bake for 15 minutes, or until the cheese is bubbly and nicely melted.
  7. Assemble the subs: Carefully place each piece of chicken onto a sub roll. If desired, garnish with fresh basil for an extra burst of flavor and color.
