- Preheat your oven to 400°F.
- In a bowl, stir rosemary, thyme, parsley, minced garlic, olive oil, salt, and pepper into a paste.
- Score the lamb’s fat cap and insert garlic slivers into 1-inch cuts.
- Press the herb mixture firmly onto all sides of the leg.
- Place on a rack in a roasting pan and roast at 400°F for 15 minutes, then lower to 350°F for about 1 hour 15 minutes to reach 135°F internal temperature.
- Remove the lamb, tent loosely with foil, and rest for 15 minutes.
- Pour red wine into the roasting pan, scraping up browned bits.
- Add stock, roasted garlic, and thyme sprigs to the pan, and simmer until reduced by half.
- Remove thyme stalks and whisk in cold butter off heat until glossy.
