How to Make Zucchini and Corn Bake
  1. Preheat oven: Set to 375°F (190°C) with rack in center. Allow full heat-up for even, golden browning.
  2. Sauté onion and garlic: Heat 1 tbsp olive oil in a skillet over medium heat. Cook onion and garlic until soft and translucent, about 4–5 minutes.
  3. Combine ingredients: In a large bowl whisk eggs, sour cream, salt, and pepper. Gently fold in zucchini, corn, and sautéed onion mixture.
  4. Assemble bake: Grease an 8×8-inch baking dish. Transfer mixture, smoothing top with back of a spoon. Sprinkle shredded cheddar and parmesan evenly.
  5. Bake to golden: Place dish in oven and bake 35–40 minutes, until edges bubble and top turns golden brown. Rest 10 minutes before slicing.
