  • 1 pound lean ground turkey Choose 93% lean for less fat
  • 2 medium Russet potatoes Diced into bite-sized cubes
  • 2 tablespoons olive oil For sautéing
  • 1 medium yellow onion Diced finely
  • 3 cloves garlic Freshly minced
  • 1 teaspoon paprika Smoked or sweet
  • 1 teaspoon dried thyme
  • to taste salt
  • to taste pepper

  • 1 bell pepper bell peppers Chopped for color and sweetness
  • 1/4 cup fresh parsley Chopped for garnish
  • 1 cup grated cheddar cheese For topping

Cooking Instructions
  1. Peel (optional) and dice russet potatoes into uniform cubes. Rinse under cold water and pat dry.
  2. Heat olive oil in a skillet over medium heat. Add potatoes, toss occasionally until golden brown and tender, approximately 10–12 minutes.
  3. Push potatoes to one side of the skillet. Add onion and garlic to the cleared space, sautéing for 2–3 minutes until softened.
  4. Add ground turkey, breaking it up. Season with paprika, thyme, salt, and pepper, and cook until no longer pink, around 5–7 minutes.
  5. Stir together potatoes, aromatics, and turkey. Lower heat, cover, and simmer for 2–3 minutes to meld flavors.
  6. Garnish with parsley or sprinkle with cheddar cheese if desired.
