- Peel (optional) and dice russet potatoes into uniform cubes. Rinse under cold water and pat dry.
- Heat olive oil in a skillet over medium heat. Add potatoes, toss occasionally until golden brown and tender, approximately 10–12 minutes.
- Push potatoes to one side of the skillet. Add onion and garlic to the cleared space, sautéing for 2–3 minutes until softened.
- Add ground turkey, breaking it up. Season with paprika, thyme, salt, and pepper, and cook until no longer pink, around 5–7 minutes.
- Stir together potatoes, aromatics, and turkey. Lower heat, cover, and simmer for 2–3 minutes to meld flavors.
- Garnish with parsley or sprinkle with cheddar cheese if desired.
