Method
 

Instructions
  1. Preheat your oven to 425°F, positioning the rack in the center.
  2. Slice carrots, zucchini, red pepper, and onion into 1-inch pieces.
  3. Drizzle vegetables and smashed garlic with olive oil, then sprinkle salt and black pepper.
  4. Arrange seasoned vegetables in a single layer on a baking sheet. Roast for 20–25 minutes, stirring halfway.
  5. Bring vegetable broth to a gentle boil in a saucepan over medium-high heat.
  6. Stir in bulgur, reduce heat to low, cover, and simmer for 12–15 minutes.
  7. Remove from heat and drizzle olive oil over the cooked bulgur, fluffing gently with a fork.
  8. Spoon warm bulgur into bowls, top with roasted veggies, and drizzle with lemon juice.
  9. Sprinkle parsley, feta, and nuts or seeds for garnish.
