How to Make Vegetarian Zucchini Tomato Skillet
- Preheat a large skillet over medium heat and pour in olive oil. Let it shimmer for about a minute until fragrant.
- Add the chopped onion and minced garlic. Cook for 3–4 minutes until onions become translucent.
- Toss in the sliced zucchini and stir well. Let it cook for 5 minutes until tender-crisp and lightly golden.
- Stir in the fresh tomatoes, dried oregano, salt, and black pepper. Simmer for 8 minutes until tomatoes break down.
- Remove from heat and fold in fresh basil leaves.
- Spoon the skillet onto plates. Enjoy hot with a sprinkle of parmesan or crusty bread.
