How to Make Vegetarian Zucchini Tomato Skillet
  1. Preheat a large skillet over medium heat and pour in olive oil. Let it shimmer for about a minute until fragrant.
  2. Add the chopped onion and minced garlic. Cook for 3–4 minutes until onions become translucent.
  3. Toss in the sliced zucchini and stir well. Let it cook for 5 minutes until tender-crisp and lightly golden.
  4. Stir in the fresh tomatoes, dried oregano, salt, and black pepper. Simmer for 8 minutes until tomatoes break down.
  5. Remove from heat and fold in fresh basil leaves.
