Method
 

Cooking Instructions
  1. Preheat your oven to 375°F.
  2. In a skillet over medium heat, warm olive oil and cook garlic until fragrant, then add spinach until just wilted.
  3. In a mixing bowl, whisk together ricotta, eggs, Parmesan, lemon zest, salt, and pepper until smooth.
  4. Fold the cooled spinach into the cheese blend gently.
  5. Lightly grease an 8×8-inch dish with olive oil, then spread the spinach-ricotta mixture evenly.
  6. Place in preheated oven and bake for 25–30 minutes.
  7. Allow the bake to rest for 5 minutes after removing from the oven.
