Preparation Steps
- Preheat your oven to 350°F (175°C) and generously grease a 9×9-inch baking dish with olive oil.
- In a large skillet, warm 1½ tablespoons of olive oil over medium heat, sauté chopped onion until translucent, then add fresh spinach and cook until it wilts.
- In a medium bowl, whisk together ricotta cheese, eggs, grated Parmesan, minced garlic, a pinch of nutmeg, and season with salt and pepper until smooth.
- Carefully fold the cooled spinach and onion mixture into the ricotta base.
- Evenly sprinkle Parmesan cheese over the top.
- Bake for 25–30 minutes, until the center is set and topping is golden brown.
- Let it rest for about 5 minutes before serving.
