Method
 

Preparation Steps
  1. Preheat your oven to 350°F (175°C) and generously grease a 9×9-inch baking dish with olive oil.
  2. In a large skillet, warm 1½ tablespoons of olive oil over medium heat, sauté chopped onion until translucent, then add fresh spinach and cook until it wilts.
  3. In a medium bowl, whisk together ricotta cheese, eggs, grated Parmesan, minced garlic, a pinch of nutmeg, and season with salt and pepper until smooth.
  4. Carefully fold the cooled spinach and onion mixture into the ricotta base.
  5. Evenly sprinkle Parmesan cheese over the top.
  6. Bake for 25–30 minutes, until the center is set and topping is golden brown.
  7. Let it rest for about 5 minutes before serving.
