Preparation
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease with olive oil.
- In a bowl, combine chopped pistachios, panko crumbs, minced garlic, lemon zest, herbs, salt, and pepper. Drizzle olive oil over the mixture.
- Pat cod fillets dry and press the pistachio-herb mixture firmly onto the tops of each fillet.
- Bake at 400°F for 12–15 minutes until the crust is golden brown.

- Whisk together fresh lemon and orange juices with honey, salt, and olive oil until smooth.
- Serve baked cod on plates, drizzle with citrus dressing, and sprinkle with fresh mint or basil.
