  • 1 cup Shelled pistachios Finely chopped
  • 1/2 cup Fresh herbs Parsley, thyme, or dill
  • 1/2 cup Panko breadcrumbs For extra crispiness
  • 2 cloves Garlic Minced
  • 1 tablespoon Lemon zest For citrus brightness
  • 2 tablespoons Olive oil For binding

For the Citrus Dressing & Garnish
  • 2 tablespoons Fresh lemon juice
  • 2 tablespoons Fresh orange juice
  • 1 tablespoon Honey or maple syrup For sweetness

Method
 

Preparation
  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease with olive oil.
  2. In a bowl, combine chopped pistachios, panko crumbs, minced garlic, lemon zest, herbs, salt, and pepper. Drizzle olive oil over the mixture.
  3. Pat cod fillets dry and press the pistachio-herb mixture firmly onto the tops of each fillet.
  4. Bake at 400°F for 12–15 minutes until the crust is golden brown.
Citrus Dressing
  1. Whisk together fresh lemon and orange juices with honey, salt, and olive oil until smooth.
  2. Serve baked cod on plates, drizzle with citrus dressing, and sprinkle with fresh mint or basil.
