  • 1 4 fresh parsley finely minced
  • 2 tbsp fresh dill chopped
  • 2 cloves garlic minced
  • 1 tbsp lemon zest grated
For the Halibut
  • 4 6 oz halibut fillets firm, fresh
  • 2 tbsp olive oil for brushing
  • 1 tsp salt to taste
  • 1 tsp pepper to taste

  • 2 pieces lemon wedges for serving

Method
 

Instructions
  1. Preheat oven: Set oven to 400°F (200°C) and position the rack in the center.
  2. Combine crust: In a mixing bowl, stir chopped pistachios, parsley, dill, minced garlic, and lemon zest.
  3. Prep fillets: Pat halibut fillets dry, brush each side with olive oil, and season with salt and pepper.
  4. Apply crust: Press the herb-pistachio mixture onto the top of each fillet.
  5. Bake fish: Place fillets on a parchment-lined baking sheet and bake for 12–15 minutes.
  6. Rest & garnish: Allow baked halibut to rest for 2 minutes, then garnish with lemon wedges and fresh herbs.
