Ingredients
  

For the Fish and Sauce
  • 4 filets Cod fresh, firm fillets
  • 2 cups Cherry tomatoes ripe, juicy
  • 1 cup Kalamata olives pitted and chopped
  • 2 cloves Garlic finely minced
  • 2 tablespoons Extra virgin olive oil for sautéing
For the Herbs and Seasoning
  • 1 tablespoon Fresh parsley chopped
  • 1 tablespoon Fresh basil optional
  • 2 tablespoons Lemon juice
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
Optional Garnish
  • 1 teaspoon Red pepper flakes for heat
  • 2 tablespoons Capers

Method
 

Directions
  1. Preheat oven to 400°F (200°C) and drizzle olive oil in an ovenproof skillet.
  2. Warm 2 tablespoons of extra virgin olive oil, add minced garlic, and cook until fragrant, about 1 minute.
  3. Stir in cherry tomatoes, chopped Kalamata olives, lemon juice, salt, and pepper. Simmer for 5–7 minutes.
  4. Pat cod fillets dry, season both sides, then gently nestle them into the bubbling sauce.
  5. Transfer skillet to the preheated oven and bake 12–15 minutes.
  6. Remove from oven, sprinkle fresh parsley and basil over the fish, and let rest 2 minutes.
