- Preheat oven to 400°F (200°C) and drizzle olive oil in an ovenproof skillet.
- Warm 2 tablespoons of extra virgin olive oil, add minced garlic, and cook until fragrant, about 1 minute.
- Stir in cherry tomatoes, chopped Kalamata olives, lemon juice, salt, and pepper. Simmer for 5–7 minutes.
- Pat cod fillets dry, season both sides, then gently nestle them into the bubbling sauce.
- Transfer skillet to the preheated oven and bake 12–15 minutes.
- Remove from oven, sprinkle fresh parsley and basil over the fish, and let rest 2 minutes.
