Method
 

Preparation
  1. Pit Medjool dates and soak in warm water for 10 minutes. Drain thoroughly, ensuring they’re soft and plump for a smooth, creamy blend.
  2. Add raw almonds to a food processor and pulse in short bursts until coarsely ground, about 10 seconds.
  3. Add drained dates, matcha powder, chia seeds, vanilla extract, and a pinch of sea salt to the food processor. Blend until ingredients start to stick together.
  4. Pulse the mixture until it clumps into a cohesive, slightly sticky dough, about 20–30 seconds.
  5. Transfer the dough to a mixing bowl, then fold in toasted shredded coconut until evenly coated.
  6. Scoop heaping tablespoons of dough, then roll between your palms into 1-inch balls.
  7. Roll each ball in extra toasted coconut flakes, pressing lightly so the coating sticks.
  8. Arrange the energy bites on a parchment-lined tray, cover, and refrigerate for at least 30 minutes.
