  3. If desired, quickly pulse in dark chocolate chips or shredded coconut until evenly distributed.
  4. Scoop heaping tablespoons of dough (about 1 inch) and roll between your palms until smooth, creating roughly 12 uniform bites.
  5. Place the energy bites on a parchment-lined tray and refrigerate for at least 30 minutes until firm and ready to enjoy.
