How to Make Maple-Glazed Roasted Easter Carrots
- Preheat your oven to 425°F (220°C) and position the rack in the middle.
- Trim the leafy tops and root ends of the carrots; peel if desired, and pat dry.
- In a large bowl, whisk together olive oil, salt, and pepper, then toss the carrots.
- Spread carrots in a single layer on a rimmed baking sheet, leaving space between each carrot.
- Bake for 20 minutes, until tender and lightly golden, stirring once halfway through.
- In a small bowl, whisk together maple syrup, Dijon mustard, and garlic powder until smooth.
- Brush each roasted carrot generously with the maple glaze using a pastry brush.
