Cooking Steps
- Warm olive oil in a large pot over medium heat until it shimmers, about 1 minute.
- Add chopped onion and minced garlic, sauté for 4-5 minutes until onion is translucent.
- Stir in diced carrots, chopped celery, cubed potatoes, green beans, tomatoes, and zucchini, cooking for 2-3 minutes.
- Pour in vegetable broth to cover veggies, add bay leaf and thyme, increase heat to a gentle boil.
- Lower heat to a simmer, cover pot, and cook for 20-25 minutes until vegetables are tender.
