Soup Base
  • 2 tbsp Olive oil Use as a gentle sauté base.
  • 1 cup Vegetable broth Choose low-sodium.
  • 1 medium Onion Yellow or white, chopped.
  • 2 cloves Garlic Mince finely.
Vegetables
  • 2 medium Carrots Diced.
  • 2 stalks Celery Chopped.
  • 2 medium Potatoes Peeled and cubed.
  • 2 medium Tomatoes Fresh or canned.
  • 1 cup Green beans Trimmed and chopped.
  • 1 medium Zucchini Chopped.
Herbs & Seasonings
  • 1 leaf Bay leaf Remove before serving.
  • 1 tbsp Fresh thyme Sprigs.
  • to taste Salt
  • to taste Black pepper
  • 1 tbsp Parsley Chopped fresh.
Optional Add-ins
  • 1 cup Lentils or beans For extra protein.
  • 1 tsp Red pepper flakes For a spicy kick.

Method
 

Cooking Steps
  1. Warm olive oil in a large pot over medium heat until it shimmers, about 1 minute.
  2. Add chopped onion and minced garlic, sauté for 4-5 minutes until onion is translucent.
  3. Stir in diced carrots, chopped celery, cubed potatoes, green beans, tomatoes, and zucchini, cooking for 2-3 minutes.
  4. Pour in vegetable broth to cover veggies, add bay leaf and thyme, increase heat to a gentle boil.
  5. Lower heat to a simmer, cover pot, and cook for 20-25 minutes until vegetables are tender.
  6. Remove bay leaf, stir in parsley, season with salt and pepper to taste, then ladle into bowls.
