Ingredients
  

For the Salad Base
  • 1 cup Quinoa well-rinsed
  • 1 cup Dried Cranberries
  • 1/2 cup Fresh Parsley finely chopped
  • 1/4 cup Fresh Mint chopped
  • 3 stalks Green Onions thinly sliced
For the Dressing
  • 1/4 cup Extra Virgin Olive Oil
  • 2 tablespoons Lemon Juice fresh-squeezed
  • 1 tablespoon Honey adjust to taste
  • Salt & Black Pepper season to taste

Method
 

Preparation
  1. Rinse quinoa thoroughly under cold water, then drain well.
  2. Combine rinsed quinoa and 2 cups water in a saucepan, bring to a boil, then reduce to simmer, cover, and cook for about 15 minutes.
  3. Remove lid, fluff quinoa gently with a fork, and let cool for about 10 minutes.
  4. Stir in chopped parsley, mint, green onions, and dried cranberries.
Dressing
  1. In a small bowl, whisk together olive oil, lemon juice, honey, salt, and black pepper until smooth.
  2. Pour the dressing over the quinoa mixture and toss gently to combine.
