  • 1 pound carrots firm and fresh
  • 2 tablespoons olive oil
  • 1/2 teaspoon freshly ground black pepper
  • fresh thyme or parsley (optional) for garnish

Method
 

Glaze Preparation
  1. Gather maple syrup, brown sugar, butter, cinnamon, and salt in a small saucepan.
  2. In a small saucepan over medium heat, whisk together glaze ingredients until smooth.
  3. Let the glaze simmer over medium-low heat for about 5 minutes, stirring occasionally.
Carrots Preparation
  1. Choose firm carrots and a rimmed baking sheet lined with parchment.
  2. Preheat your oven to 400°F (200°C).
  3. Toss carrots with olive oil, salt, and pepper until coated.
  4. Spread carrots in a single layer and bake for 20–25 minutes until tender.
  5. Remove carrots, drizzle with warm glaze, and toss gently to coat.
  6. Return to oven and bake for an additional 5 minutes until the glaze bubbles.
  7. Transfer the carrots to a serving platter and garnish with herbs if using.
