How to Make Chicken & Vegetable Rice Skillet
- Pat chicken thighs dry, then season with salt, pepper, and paprika.
- Heat olive oil in a skillet over medium-high heat. Sear chicken for 4 minutes per side until golden. Transfer aside.
- Add more olive oil to the skillet and sauté onion, garlic, carrots, and bell peppers for 4–5 minutes until softened.
- Stir in rinsed rice and toss for 2 minutes until slightly translucent.
- Pour in chicken broth, stir gently, and nestle the chicken on top before simmering.
- Cover skillet, reduce heat to low, and cook for 18–20 minutes until rice is tender and liquid is absorbed.
- Remove from heat, let it rest covered for 5 minutes, fluff rice, and garnish with parsley or cilantro.
