For the Chicken & Rice Base
  • 1 lb boneless, skinless chicken thighs or breasts Choose for quick cooking
  • 1 cup long-grain white rice Rinsed
  • 2 cups chicken broth Use low sodium
For the Vegetables
  • 1 cup bell peppers Colorful and sweet
  • 1 medium onion Finely chopped
  • 3 cloves garlic Minced
  • 1 cup carrots Diced
  • 1 cup frozen peas or green beans Added at the end
Seasonings & Finishing Touches
  • 1 tbsp olive oil For sautéing
  • 1 tbsp smoked paprika Adds smoky warmth
  • 1 tsp dried thyme or Italian herbs
  • 1 tsp salt To taste
  • 1 tsp freshly ground black pepper To taste
  • 2 tbsp fresh parsley or cilantro Chopped, optional

Method
 

How to Make Chicken & Vegetable Rice Skillet
  1. Pat chicken thighs dry, then season with salt, pepper, and paprika.
  2. Heat olive oil in a skillet over medium-high heat. Sear chicken for 4 minutes per side until golden. Transfer aside.
  3. Add more olive oil to the skillet and sauté onion, garlic, carrots, and bell peppers for 4–5 minutes until softened.
  4. Stir in rinsed rice and toss for 2 minutes until slightly translucent.
  5. Pour in chicken broth, stir gently, and nestle the chicken on top before simmering.
  6. Cover skillet, reduce heat to low, and cook for 18–20 minutes until rice is tender and liquid is absorbed.
  7. Remove from heat, let it rest covered for 5 minutes, fluff rice, and garnish with parsley or cilantro.
