How to Make Chicken Mushroom Soy Skillet
  1. Pat chicken dry and season with salt and pepper, then let rest at room temperature for about 5 minutes.
  2. Warm olive oil in a large skillet over medium-high heat until shimmering, about 1 minute.
  3. Carefully arrange chicken pieces in the hot skillet, cooking 4–5 minutes per side until golden brown.
  4. Transfer seared chicken to a plate and tent loosely with foil for about 3 minutes.
  5. Add sliced mushrooms and minced garlic to the skillet, stirring occasionally until mushrooms release moisture, about 4 minutes.
  6. Return chicken to skillet and pour soy sauce evenly around, stirring gently to coat.
  7. Reduce heat to medium-low and cook 2–3 minutes more until sauce thickens and chicken reaches 165°F.
  8. Sprinkle with chopped fresh parsley or green onions and serve hot over rice, noodles, or steamed veggies.
