How to Make Almond Date Energy Bars
  1. Soak the dates in warm water for 5 minutes until plump and soft, then drain thoroughly.
  2. Toast raw almonds in a dry skillet over medium heat for about 5 minutes, stirring constantly until fragrant and lightly golden. Let cool.
  3. Pulse soaked dates, toasted almonds, oats, honey, vanilla, and sea salt in a food processor until coarse yet sticky, about 12–15 pulses.
  4. Line an 8x8-inch pan with parchment and press the mixture firmly into an even layer.
  5. Refrigerate for at least 1 hour, then cut into bars.
