Instructions
  1. Heat a large skillet over medium-high heat, then add 1 tablespoon sesame oil. Swirl until it ripples and smells fragrant, about 1 minute.
  2. Add the ground beef to the hot skillet. Use a spatula to break it into crumbles, cooking until no pink remains and edges start to brown, about 4 minutes.
  3. Stir in minced garlic and a pinch of brown sugar. Cook for 30 seconds or until garlic is fragrant and sugar begins to melt into the beef.
  4. Add gochujang and soy sauce to the skillet. Stir constantly as the sauce simmers for 2 minutes, coating the beef in a glossy, thickened glaze.
  5. Divide hot rice among serving bowls. Top each with the gochujang beef, shredded carrots, sliced cucumber, and green onions. Finish with a sprinkle of toasted sesame seeds.
