Preparation and Cooking
- Preheat oven to 375°F (190°C) and lightly coat a baking dish with olive oil.
- Heat olive oil in a skillet, cook onion and garlic until translucent, about 3-4 minutes.
- Add carrot, lentils, broth, cumin, smoked paprika, salt, and pepper. Bring to a boil, then simmer for about 20 minutes.
- Sauté spinach in a separate skillet until wilted, about 1-2 minutes, then cool.
- Mix ricotta with egg and Parmesan until smooth.
- Layer lentil mix, ricotta blend, remaining lentils, and spinach in the baking dish.
- Bake in preheated oven for 25-30 minutes until golden and bubbly.
- Let cool for 10 minutes before serving.
