Method
 

Preparation and Cooking
  1. Preheat oven to 375°F (190°C) and lightly coat a baking dish with olive oil.
  2. Heat olive oil in a skillet, cook onion and garlic until translucent, about 3-4 minutes.
  3. Add carrot, lentils, broth, cumin, smoked paprika, salt, and pepper. Bring to a boil, then simmer for about 20 minutes.
  4. Sauté spinach in a separate skillet until wilted, about 1-2 minutes, then cool.
  5. Mix ricotta with egg and Parmesan until smooth.
  6. Layer lentil mix, ricotta blend, remaining lentils, and spinach in the baking dish.
  7. Bake in preheated oven for 25-30 minutes until golden and bubbly.
  8. Let cool for 10 minutes before serving.
