Method
 

Making the Cookies
  1. Preheat Oven: Set oven to 350°F and line two baking sheets with parchment.
  2. Mix Dry Ingredients: Whisk flour, ground ginger, cinnamon, cloves, baking soda, and salt in a bowl until combined.
  3. Cream Butter & Sugars: Beat unsalted butter with brown and granulated sugars until light and fluffy.
  4. Add Egg & Molasses: Stir in egg and molasses until smooth and glossy.
  5. Combine Wet & Dry: Gradually fold dry ingredients into the butter mixture until no flour streaks remain.
  6. Chill Dough: Cover dough and refrigerate for 30 minutes.
  7. Scoop & Roll: Portion dough into balls and roll in sanding sugar.
  8. Bake Cookies: Arrange balls on sheets and bake for 8-10 minutes.
  9. Cool on Rack: Let cookies rest, then transfer to a wire rack to cool completely.
