How to Make Roasted Almond Date Energy Bars
- Line an 8×8-inch baking pan with parchment paper, leaving overhang for easy lifting.
- Spread roasted almonds on a baking sheet and bake at 350°F for 8–10 minutes until fragrant.
- Pit Medjool dates, add to food processor, and pulse until they form a sticky paste.
- Add rolled oats, chia seeds, and salt to the dates, then pulse until coarse and crumbly.
- Drizzle in honey or maple syrup and vanilla extract, then pulse until a thick dough forms.
- Transfer and press the dough into the prepared pan to form an even layer.
- Refrigerate for at least 1 hour until firm; bars should feel solid yet pliable.
