For the Apple Oat Base
- Preheat your oven to 350°F and line an 8×8-inch pan with parchment paper for easy removal.
- Mix rolled oats, all-purpose flour, brown sugar, cinnamon, baking powder, and salt in a large bowl until evenly combined.
- Press two-thirds of the oat mixture firmly into the prepared pan.
For the Apple Filling
- Toss diced apples with lemon juice, maple syrup, and ground nutmeg in a medium bowl.
- Layer the apple mixture evenly over the oat base.
For the Topping & Assembly
- Crumble the remaining oat mixture and cold, cubed butter over the apples.
- Bake the bars at 350°F for 25–30 minutes.
- Cool the bars in the pan on a wire rack for at least 15 minutes.
