Ingredients
  

For the Apple Oat Base
  • 2 cups Rolled oats Use old-fashioned oats
  • 1 cup All-purpose flour Can be swapped with almond flour for gluten-free
  • 1/2 cup Brown sugar
  • 1 teaspoon Ground cinnamon The star spice
  • 1 teaspoon Baking powder
  • 1/4 teaspoon Salt
For the Apple Filling
  • 3 cups Apples (peeled and diced) Use Granny Smith or Honeycrisp
  • 1 tablespoon Lemon juice
  • 2 tablespoons Maple syrup or honey
  • 1/4 teaspoon Ground nutmeg
For the Topping
  • 1/4 cup Butter (cold, cubed)
  • 1/2 cup Chopped nuts (optional) Walnuts or pecans

Method
 

For the Apple Oat Base
  1. Preheat your oven to 350°F and line an 8×8-inch pan with parchment paper for easy removal.
  2. Mix rolled oats, all-purpose flour, brown sugar, cinnamon, baking powder, and salt in a large bowl until evenly combined.
  3. Press two-thirds of the oat mixture firmly into the prepared pan.
For the Apple Filling
  1. Toss diced apples with lemon juice, maple syrup, and ground nutmeg in a medium bowl.
  2. Layer the apple mixture evenly over the oat base.
For the Topping & Assembly
  1. Crumble the remaining oat mixture and cold, cubed butter over the apples.
  2. Bake the bars at 350°F for 25–30 minutes.
  3. Cool the bars in the pan on a wire rack for at least 15 minutes.
