  • Sweet Potatoes: The star of the show, of course! When it comes to sweet potatoes, you have a few varieties to choose from, each with slightly different characteristics. The most common types you’ll find in grocery stores are often labeled as either “sweet potatoes” or “yams” – although, technically, what’s often sold as “yams” in the US are actually just another variety of sweet potato with a darker skin and more moist, orange flesh. For this recipe, either type will work beautifully. However, for a slightly drier and firmer cube that holds its shape exceptionally well after roasting, look for the varieties with lighter skin and pale yellow flesh. These tend to be less starchy and retain their texture better. Regardless of the type you choose, ensure your sweet potatoes are firm to the touch, without any soft spots or blemishes. The size of the sweet potatoes isn’t critical, but try to select ones that are relatively uniform in size so they cook at a similar rate. Organic sweet potatoes are always a great choice if available, but conventional ones will work just as well. Remember to wash your sweet potatoes thoroughly under cool running water, even if you plan to peel them, to remove any dirt or residue.
  • Olive Oil: A good quality olive oil is essential for roasting vegetables. It not only prevents the sweet potatoes from sticking to the baking sheet but also adds a subtle richness and flavor that complements the natural sweetness of the potatoes. Extra virgin olive oil is generally recommended for its superior flavor and health benefits, as it’s rich in antioxidants and healthy monounsaturated fats. When roasting at higher temperatures, some people prefer to use oils with a higher smoke point, like avocado oil or coconut oil. While these are perfectly acceptable alternatives, olive oil works wonderfully for roasting sweet potato cubes at the temperatures we’ll be using. If you’re concerned about the olive oil flavor being too strong, you can opt for a light olive oil or even a neutral-flavored oil like grapeseed oil. However, the subtle fruity notes of olive oil often enhance the overall taste of the roasted sweet potatoes beautifully. The amount of olive oil is also important; you want enough to lightly coat the sweet potato cubes so they roast evenly and develop a slightly crispy exterior, but not so much that they become greasy.
  • Salt: Salt is a crucial ingredient in almost any savory dish, and sweet potato cubes are no exception. Salt enhances the natural sweetness of the potatoes and balances the overall flavor profile. It also plays a role in drawing out moisture from the surface of the sweet potatoes, which helps them to caramelize and crisp up during roasting. Kosher salt or sea salt are excellent choices for this recipe. Kosher salt has a coarser grain that’s easy to pinch and distribute evenly, while sea salt offers a slightly more complex flavor. Table salt can also be used, but you may need to use slightly less as it’s more concentrated. The amount of salt is a matter of personal preference, but it’s important to season generously enough to bring out the flavors without making the cubes overly salty. Start with a moderate amount and taste after roasting to adjust if needed.
  • Black Pepper: Freshly ground black pepper adds a subtle warmth and spice that complements the sweetness of the sweet potatoes. It provides a nice contrast and depth of flavor that elevates the simple ingredients. While pre-ground pepper can be used, freshly ground pepper is always preferable for its brighter and more aromatic flavor. You can adjust the amount of black pepper to your liking, depending on your spice preference. A generous pinch is usually sufficient to enhance the flavor without being overpowering.

  1. Preheat Your Oven: The first and most crucial step is to preheat your oven to the correct temperature. For sweet potato cubes, a temperature of 400°F (200°C) is ideal. This high heat allows the sweet potatoes to roast quickly, caramelize beautifully, and develop a slightly crispy exterior while remaining tender on the inside. Make sure your oven is fully preheated before placing the sweet potato cubes inside; this will ensure even cooking and prevent them from steaming instead of roasting.
  2. Prepare the Sweet Potatoes: While the oven is preheating, it’s time to prepare your sweet potatoes.

    • Wash the Sweet Potatoes: Begin by thoroughly washing the sweet potatoes under cool running water. Use a vegetable brush to scrub away any dirt or soil clinging to the skin. Even if you plan to peel the sweet potatoes, washing them first is important to prevent transferring any dirt to the flesh during peeling.
    • Peel (Optional): Peeling sweet potatoes is optional for this recipe. The skin of sweet potatoes is perfectly edible and contains a good amount of fiber and nutrients. If you prefer a smoother texture or are not a fan of the skin, you can peel the sweet potatoes using a vegetable peeler. However, leaving the skin on will add a bit more texture and rustic appeal to the cubes. If you choose to leave the skin on, make sure to scrub them extra well during washing.
    • Cube the Sweet Potatoes: Now it’s time to cut the sweet potatoes into cubes. For even cooking, it’s important to cut the cubes into roughly uniform sizes. Aim for cubes that are about ¾ to 1 inch in size. Smaller cubes will cook faster and may become too crispy, while larger cubes may take longer to cook through and might not crisp up as well. To cube the sweet potatoes, first, cut them into slices lengthwise, then stack the slices and cut them into strips, and finally, cut the strips crosswise into cubes. A sharp chef’s knife will make this task easier and safer.

  3. Toss with Olive Oil and Seasonings: In a large bowl, combine the cubed sweet potatoes, olive oil, salt, and black pepper.

    • Add Olive Oil: Drizzle the olive oil over the sweet potato cubes. The amount of olive oil should be enough to lightly coat all the cubes. Start with about 2-3 tablespoons of olive oil for 2 medium-sized sweet potatoes and adjust as needed. You want the cubes to be lightly glistening with oil, but not swimming in it.
    • Season Generously: Sprinkle the salt and black pepper over the sweet potato cubes. Start with about ½ teaspoon of salt and ¼ teaspoon of black pepper for 2 medium sweet potatoes. You can adjust the seasoning to your taste. If you are using any optional spices or herbs, add them at this stage as well.
    • Toss to Coat: Use your hands or a large spoon to toss the sweet potato cubes with the olive oil and seasonings until they are evenly coated. Make sure every cube is lightly coated with oil and seasonings for optimal flavor and roasting.

  4. Arrange on a Baking Sheet: Spread the seasoned sweet potato cubes in a single layer on a baking sheet. It’s important to arrange them in a single layer and avoid overcrowding the pan. Overcrowding will cause the sweet potatoes to steam instead of roast, resulting in soggy cubes. If necessary, use two baking sheets to ensure they are spread out in a single layer. For easier cleanup, you can line the baking sheet with parchment paper or aluminum foil. This will also prevent the sweet potatoes from sticking to the pan.
  5. Roast in the Oven: Place the baking sheet in the preheated oven and roast for 20-25 minutes, or until the sweet potato cubes are tender and lightly browned.

    • Flip Halfway Through: About halfway through the roasting time, around 10-12 minutes, remove the baking sheet from the oven and flip the sweet potato cubes using a spatula. This will ensure even cooking and browning on all sides.
    • Check for Doneness: To check if the sweet potatoes are done, pierce a cube with a fork. It should be easily pierced and tender throughout. The edges should be slightly caramelized and golden brown. If they are not tender enough, continue roasting for another 5-10 minutes, checking for doneness every few minutes. Roasting time may vary slightly depending on the size of the cubes and your oven.

  6. Cool Slightly and Serve: Once the sweet potato cubes are roasted to perfection, remove the baking sheet from the oven and let them cool slightly for a few minutes before serving. This will allow them to firm up a bit and make them easier to handle. Serve them hot as a side dish, snack, or as part of a larger meal.
