Sweet Potato & Avocado Breakfast Scramble Recipe

  • 1 medium sweet potato, peeled and diced
  • 1 ripe avocado, diced
  • 2 large eggs or 1/2 cup egg substitute
  • 1/4 cup diced onion
  • 1/4 tsp garlic powder
  • Salt and pepper to taste
  • Olive oil for cooking
  • Fresh cilantro or parsley for garnish (optional)

Instructions

  1. Heat a Pan: Begin by heating a pan over medium heat and adding a splash of olive oil.
  2. Sauté the Onion: Add the diced onion to the pan and sauté until soft, about 3-4 minutes.
  3. Cook the Sweet Potato: Add the diced sweet potato to the pan. Cook until tender, stirring occasionally, for about 10-12 minutes.
  4. Whisk the Eggs: While the sweet potatoes are cooking, whisk the eggs or egg substitute in a bowl. Season with garlic powder, salt, and pepper.
  5. Scramble the Eggs: Pour the seasoned eggs into the pan with the sweet potatoes and onion. Scramble until fully cooked.
  6. Add the Avocado: Gently fold in the diced avocado and cook until warmed through.
  7. Serve: Serve hot, garnished with fresh herbs if desired.
