  • 10 ounces Frozen Spinach, Thawed and Drained: Spinach is, of course, the star of the show. Frozen spinach is incredibly convenient and works beautifully in this recipe. However, the key is to ensure it’s thoroughly thawed and, even more importantly, meticulously drained. Excess moisture is the enemy of a perfect spinach dip, leading to a watery filling and potentially soggy bites. After thawing, squeeze the spinach with your hands or use a clean kitchen towel to remove as much liquid as possible. Don’t be shy – you’ll be surprised how much water spinach retains! If you prefer using fresh spinach, you’ll need approximately 1 pound of fresh spinach. Sauté it until wilted, then chop it finely and, again, press out any excess moisture. Baby spinach is a great choice for its tender leaves and mild flavor.
  • 8 ounces Cream Cheese, Softened: Cream cheese provides the creamy, luscious base of our dip. Full-fat cream cheese will give you the richest flavor and texture, but you can use reduced-fat cream cheese if you’re looking to lighten things up slightly. Make sure your cream cheese is properly softened before you begin mixing. This is crucial for a smooth and lump-free dip. Leaving it at room temperature for about 30 minutes to an hour should do the trick. If you’re in a hurry, you can carefully microwave it in short intervals, checking frequently to avoid melting. For a tangier flavor profile, consider using Neufchâtel cheese, which is a lower-fat alternative to cream cheese.
  • 1/2 cup Mayonnaise: Mayonnaise adds moisture and richness, contributing to the overall creamy texture and enhancing the savory flavors of the dip. Full-fat mayonnaise will deliver the best flavor, but light mayonnaise can be used as a substitute. For a richer, more homemade taste, consider using a high-quality mayonnaise made with olive oil or avocado oil. For the “Bite” – The Crust:

  • 1 package (14.1 ounces) Refrigerated Pie Crusts: Refrigerated pie crusts provide a convenient and flaky base for our Spinach Dip Bites. You can find these in the refrigerated section of most grocery stores. Make sure to use pie crusts, not puff pastry, for this recipe. Puff pastry will puff up too much and might not hold the dip filling as well. If you prefer to make your own pie crust from scratch, feel free to do so! A homemade pie crust will add an even more personal touch. For a slightly different flavor and texture, you could experiment with using crescent roll dough or even mini phyllo cups, though pie crust provides a sturdier and more classic bite.
  • 1 Egg, Beaten (for egg wash): An egg wash is used to brush the pie crust before baking, giving it a beautiful golden-brown color and a slight sheen. Simply beat one egg with a tablespoon of water or milk to create the egg wash. This step is optional, but it significantly improves the visual appeal of the Spinach Dip Bites.

Instructions

Step 1: Prepare the Spinach Dip Filling

  1. Thaw and Drain the Spinach: If using frozen spinach, place it in a colander and let it thaw completely. Once thawed, squeeze out as much excess water as possible. This is a crucial step to prevent a watery dip. You can use your hands or a clean kitchen towel to press out the moisture.
  2. Soften the Cream Cheese: Ensure your cream cheese is softened to room temperature. This will make it easier to mix with the other ingredients and create a smooth, creamy dip.
  3. Combine Cream Cheese and Mayonnaise: In a large mixing bowl, combine the softened cream cheese and mayonnaise. Use a hand mixer or a whisk to beat them together until smooth and creamy. This forms the base of your dip.

Step 2: Prepare the Pie Crust Bites

  1. Preheat Oven and Prepare Baking Sheet: Preheat your oven to 375°F (190°C). Lightly grease a muffin tin or mini muffin tin with cooking spray or line with paper liners. If using a regular muffin tin, you will get larger bites; mini muffin tins will yield smaller, more delicate bites – both are delicious!
  2. Unroll Pie Crusts: Unroll the refrigerated pie crusts onto a lightly floured surface.
  3. Cut Circles: Use a round cookie cutter or a glass (approximately 3-4 inches in diameter for regular muffin tins, or 2-3 inches for mini muffin tins) to cut out circles from the pie crusts. You should get approximately 12 circles from each pie crust, depending on the size of your cutter and how efficiently you cut. You can re-roll the scraps to get more circles, but the dough may become tougher with re-rolling, so try to cut efficiently the first time.
  4. Press Dough into Muffin Tin: Gently press each pie crust circle into the muffin tin cups, forming little cups or shells. Make sure the dough fits snugly into the bottom and up the sides of each cup.
  5. Fill with Spinach Dip: Spoon the prepared spinach dip filling into each pie crust cup, filling them almost to the top. Don’t overfill, as the filling might bubble over during baking.

Step 3: Bake the Spinach Dip Bites

  1. Egg Wash (Optional but Recommended): In a small bowl, whisk together the egg and a tablespoon of water or milk to create an egg wash. Brush the edges of the pie crust bites with the egg wash. This will give them a golden-brown color and a nice sheen.
  2. Bake: Place the muffin tin in the preheated oven and bake for 15-20 minutes, or until the pie crusts are golden brown and the filling is heated through and bubbly around the edges. Baking time may vary slightly depending on your oven and the size of the muffin tins you are using. Keep an eye on them to prevent over-browning.
  3. Cool Slightly: Once baked, remove the muffin tin from the oven and let the Spinach Dip Bites cool in the muffin tin for a few minutes before carefully removing them. This allows the filling to set slightly and makes them easier to handle.

  1. Remove from Muffin Tin: Gently loosen the Spinach Dip Bites from the muffin tin using a knife or spatula if needed.
