Spinach Cob Loaf Recipe

  • 1 large round bread loaf (sourdough or whole grain)
  • 2 cups fresh spinach, chopped
  • 1 cup cream cheese, softened
  • 1 cup sour cream or Greek yogurt
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 packet onion soup mix
  • 1 garlic clove, minced

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare the bread loaf: Cut the top off the bread loaf and scoop out the inside, creating a hollow bowl. Be sure to reserve the bread pieces for later use.
  3. Mix the filling: In a mixing bowl, combine the chopped spinach, softened cream cheese, sour cream (or Greek yogurt), half of the shredded cheese, onion soup mix, and minced garlic. Stir until well mixed.
  4. Assemble the loaf: Fill the hollowed bread with the spinach mixture, ensuring it’s evenly distributed. Sprinkle the remaining shredded cheese over the top of the filling.
  5. Bake: Place the filled bread on a baking sheet and bake for 25-30 minutes, or until the cheese is melted and bubbly.
  6. Serve: Serve warm, using the reserved bread pieces for dipping. Enjoy!
