  • 1 bell pepper, sliced
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 1 packet taco seasoning
  • 1 can diced tomatoes (14 oz)
  • 1 tablespoon olive oil
  • Tortillas, for serving
  • Optional toppings: avocado, salsa, and cheese

Instructions

  1. Prepare the Slow Cooker: Start by adding the sliced beef, bell pepper, onion, and minced garlic into the slow cooker.
  2. Season the Mix: Sprinkle the taco seasoning evenly over the top of the ingredients in the slow cooker.
  3. Add Tomatoes: Pour the can of diced tomatoes into the slow cooker and stir the mixture to combine everything thoroughly.
  4. Drizzle with Olive Oil: Add a tablespoon of olive oil over the ingredients to enhance the flavors and assist with the cooking process.
  5. Cook: Cover the slow cooker with its lid. You can choose to cook on low for 6-8 hours or on high for 3-4 hours, depending on your schedule.
