For the Sloppy Joe Filling:

For the Garlic Bread Boat:
- French Bread Loaf: 1 large (approx. 16-20 inches long), unsliced
- Unsalted Butter: ½ cup (1 stick), softened to room temperature
- Garlic: 4 cloves, minced (or 1 teaspoon garlic powder)
- Fresh Parsley: 2 tablespoons, finely chopped
- Italian Seasoning: 1 teaspoon
- Salt: ¼ teaspoon
For the Cheesy Topping:
- Shredded Cheese: 2 cups, of a good melting cheese like Mozzarella, sharp Cheddar, or a Colby Jack blend.

Phase 1: Cook the Sloppy Joe Filling
- Brown the Beef: Place a large skillet or Dutch oven over medium-high heat. Add the olive oil. Once shimmering, add the finely chopped onion and bell pepper. Sauté for 4-5 minutes, until they begin to soften and become fragrant.
- Add the Aromatics and Meat: Add the 3 cloves of minced garlic and cook for another minute until fragrant. Add the ground beef to the skillet. Use a wooden spoon or spatula to break the meat apart. Cook until it’s fully browned, with no pink remaining (about 6-8 minutes).
- Drain the Grease: Once the beef is browned, carefully tilt the skillet and spoon out any excess grease. This is a crucial step to prevent the final dish from being overly greasy.
- Build the Sauce: Reduce the heat to medium-low. Stir in the ketchup, water, brown sugar, Worcestershire sauce, yellow mustard, chili powder, salt, and black pepper. Mix everything thoroughly until the meat is evenly coated in the sauce.
- Simmer to Perfection: Bring the mixture to a gentle simmer. Let it simmer uncovered for 10-15 minutes, stirring occasionally. This allows the flavors to meld together and the sauce to thicken slightly. You want a thick, rich mixture, not a watery one. Once thickened, remove from the heat and set aside.
Phase 2: Prepare the Garlic Bread Boat
- Preheat and Prep: Preheat your oven to 375°F (190°C). Line a large baking sheet with parchment paper or aluminum foil for easy cleanup.
- Make the Garlic Butter: In a small bowl, combine the softened butter, 4 cloves of minced garlic, chopped fresh parsley, Italian seasoning, and salt. Mix until everything is well incorporated and you have a smooth, fragrant compound butter.
- Hollow Out the Bread: Place the loaf of French bread on a cutting board. Using a serrated bread knife, carefully slice off the top third of the loaf lengthwise, as if you were creating a lid. Set the “lid” aside for a moment. With your fingers, gently pull out some of the soft bread from the inside of the bottom loaf, leaving a border of about ½ to 1 inch all around. This creates a sturdy “boat” to hold the filling. (Don’t throw away the bread you pull out! You can use it to make croutons or breadcrumbs).
- Butter the Bread: Generously spread the prepared garlic butter all over the inside of the hollowed-out bread boat and on the cut side of the “lid” you set aside.
Phase 3: Assemble and Bake
- Fill the Boat: Carefully spoon the prepared sloppy joe mixture into the garlic butter-lined bread boat. Fill it evenly, pressing down slightly to pack it in, but be careful not to overfill.
- Add the Cheese: Sprinkle the 2 cups of shredded cheese evenly over the top of the meat filling, covering it from edge to edge.
- Bake: Place the filled bread boat on the prepared baking sheet. Place the garlic-buttered “lid” next to it on the sheet, cut-side up. Bake for 15-20 minutes, or until the cheese is completely melted, bubbly, and starting to turn golden brown in spots. The bread should be toasted and crusty.
- Rest and Serve: Carefully remove the baking sheet from the oven. Let the Sloppy Joe Garlic Bread rest for 5 minutes. This allows the filling to set slightly, making it easier to slice. Place the toasted lid back on top or slice it into strips for dipping. Use a sharp serrated knife to cut the loaf into thick, generous slices and serve immediately.
