Raspberry Crumble Bars Recipe

  • 2 cups rolled oats
  • 1 cup flour (any variety)
  • 1/2 cup brown sugar
  • 1/2 cup melted coconut oil or vegetable oil
  • 1 cup fresh or frozen raspberries
  • 1/4 cup honey or maple syrup
  • 1/2 tsp vanilla extract
  • 1/4 tsp salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mix dry ingredients: In a large bowl, combine the rolled oats, flour, brown sugar, and salt.
  3. Add oil: Pour in the melted coconut oil (or vegetable oil) and stir until the mixture becomes crumbly.
  4. Prepare the base: Press half of the oat mixture firmly into a greased 8×8 inch baking dish to form the base.
  5. Prepare raspberry filling: In another bowl, mix the raspberries with honey (or maple syrup) and vanilla extract. Spread this mixture evenly over the oat base.
  6. Add the crumble topping: Crumble the remaining oat mixture over the raspberry layer.
  7. Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the top is golden brown.
  8. Cool and slice: Allow the bars to cool completely before slicing them into 12 bars.
