- 1 lb chicken breasts
- 1 cup orzo pasta
- 2 cups vegetable broth
- 1 cup cherry tomatoes, halved
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 tsp dried basil
- 1 tsp dried oregano
- Olive oil
- Salt and pepper
Instructions
- Prepare the Chicken:
- In a large skillet, heat olive oil over medium-high heat.
- Season the chicken breasts with salt and pepper.
- Cook the chicken until golden brown, about 5-7 minutes per side.
- Remove the chicken from the skillet and set it aside.
- Sauté the Aromatics:
- In the same skillet, add minced garlic, halved cherry tomatoes, dried basil, and dried oregano.
- Cook for 2-3 minutes until the mixture is fragrant and the tomatoes begin to soften.
- Cook the Orzo:
- Pour in the vegetable broth and add the orzo pasta to the skillet.
- Bring the mixture to a boil, then reduce the heat and let it simmer for about 10 minutes.
- Stir occasionally to prevent the orzo from sticking to the bottom of the skillet.
- Create the Creamy Sauce:
- Stir in the heavy cream and grated Parmesan cheese until the sauce is smooth and creamy.
- Finish the Dish:
- Return the cooked chicken breasts to the skillet.
- Cover the skillet and let it simmer for an additional 5 minutes, or until the chicken is cooked through.
- Serve and Enjoy:
- Serve the dish warm, garnished with extra Parmesan cheese or fresh basil if desired.
