  • 1 lb chicken breasts
  • 1 cup orzo pasta
  • 2 cups vegetable broth
  • 1 cup cherry tomatoes, halved
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • Olive oil
  • Salt and pepper

Instructions

  1. Prepare the Chicken:

    • In a large skillet, heat olive oil over medium-high heat.
    • Season the chicken breasts with salt and pepper.
    • Cook the chicken until golden brown, about 5-7 minutes per side.
    • Remove the chicken from the skillet and set it aside.

  2. Sauté the Aromatics:

    • In the same skillet, add minced garlic, halved cherry tomatoes, dried basil, and dried oregano.
    • Cook for 2-3 minutes until the mixture is fragrant and the tomatoes begin to soften.

  3. Cook the Orzo:

    • Pour in the vegetable broth and add the orzo pasta to the skillet.
    • Bring the mixture to a boil, then reduce the heat and let it simmer for about 10 minutes.
    • Stir occasionally to prevent the orzo from sticking to the bottom of the skillet.

  4. Create the Creamy Sauce:

    • Stir in the heavy cream and grated Parmesan cheese until the sauce is smooth and creamy.

  5. Finish the Dish:

    • Return the cooked chicken breasts to the skillet.
    • Cover the skillet and let it simmer for an additional 5 minutes, or until the chicken is cooked through.

  6. Serve and Enjoy:

    • Serve the dish warm, garnished with extra Parmesan cheese or fresh basil if desired.
