  • ½ cup sugar
  • 1 cup yogurt or buttermilk

  • 2 large eggs
  • Zest of 1 lemon
  • 2 tbsp lemon juice

Instructions

  1. Preheat the Oven: Start by preheating your oven to 350°F (175°C) and line a muffin tin with liners to prevent sticking.
  2. Mix Dry Ingredients: In a large bowl, combine the flour, baking powder, baking soda, salt, poppy seeds, and sugar. Mix well to ensure all the dry ingredients are evenly distributed.
  3. Prepare Wet Ingredients: In another bowl, whisk together the yogurt (or buttermilk), vegetable oil, eggs, lemon zest, and lemon juice until you have a smooth mixture.
  4. Combine Mixtures: Gradually add the wet ingredients to the dry ingredients, stirring gently until just combined. Be careful not to overmix, as this can result in dense muffins.
  5. Fill the Muffin Liners: Spoon the batter into the prepared muffin cups, filling each about two-thirds full to allow room for rising.
  6. Bake: Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
