- 1 cup yogurt or buttermilk

Instructions
- Preheat the Oven: Start by preheating your oven to 350°F (175°C) and line a muffin tin with liners to prevent sticking.
- Mix Dry Ingredients: In a large bowl, combine the flour, baking powder, baking soda, salt, poppy seeds, and sugar. Mix well to ensure all the dry ingredients are evenly distributed.
- Prepare Wet Ingredients: In another bowl, whisk together the yogurt (or buttermilk), vegetable oil, eggs, lemon zest, and lemon juice until you have a smooth mixture.
- Combine Mixtures: Gradually add the wet ingredients to the dry ingredients, stirring gently until just combined. Be careful not to overmix, as this can result in dense muffins.
- Fill the Muffin Liners: Spoon the batter into the prepared muffin cups, filling each about two-thirds full to allow room for rising.
- Bake: Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Cool and Enjoy: Once baked, remove the muffins from the oven and let them cool in the tin for a few minutes before transferring them to a wire rack to cool completely. Enjoy your freshly baked muffins!
