Ingredients
Scale
- 1 lb ground turkey or chicken: A lean protein choice that works wonderfully in meatballs.
- 1/2 cup breadcrumbs: Helps bind the meatballs and adds a nice texture.
- 1/4 cup diced onion: Adds a sweet, aromatic flavor.
- 1 tbsp garlic powder: Enhances the dish with robust, savory notes.
- 1 tsp cumin: Provides a warm, earthy flavor typical of Mexican cuisine.
- 1 tsp chili powder: Adds a mild heat and a hint of smokiness.
- 1 cup enchilada sauce (store-bought or homemade): The star of the dish, bringing tang and spice.
- 1 cup shredded cheese (cheddar or Mexican blend): Melts beautifully over the meatballs.
- Fresh cilantro for garnish: Adds a fresh, vibrant finish.
Instructions
- Preheat the Oven: Set your oven to 400°F (200°C) to ensure it’s hot enough to cook the meatballs evenly.
- Combine Ingredients: In a large mixing bowl, combine the ground turkey or chicken, breadcrumbs, diced onion, garlic powder, cumin, and chili powder. Mix until all ingredients are well incorporated.
- Form Meatballs: Roll the mixture into small meatballs, about the size of a golf ball. Place them evenly spaced on a baking sheet lined with parchment paper or a silicone mat.
- Bake: Place the baking sheet in the preheated oven and bake for 20 minutes, or until the meatballs are cooked through and golden brown.
- Add Sauce and Cheese: Remove the meatballs from the oven and pour enchilada sauce generously over them. Sprinkle the shredded cheese on top.
- Melt Cheese: Return the meatballs to the oven and bake for an additional 5 minutes, or until the cheese is melted and bubbly.
- Garnish and Serve: Once out of the oven, garnish the meatballs with freshly chopped cilantro for a burst of color and freshness. Serve hot and enjoy!
