  • 1 cup enchilada sauce (store-bought or homemade): The star of the dish, bringing tang and spice.
  • 1 cup shredded cheese (cheddar or Mexican blend): Melts beautifully over the meatballs.
  • Fresh cilantro for garnish: Adds a fresh, vibrant finish.

Instructions

  1. Preheat the Oven: Set your oven to 400°F (200°C) to ensure it’s hot enough to cook the meatballs evenly.
  2. Combine Ingredients: In a large mixing bowl, combine the ground turkey or chicken, breadcrumbs, diced onion, garlic powder, cumin, and chili powder. Mix until all ingredients are well incorporated.
  3. Form Meatballs: Roll the mixture into small meatballs, about the size of a golf ball. Place them evenly spaced on a baking sheet lined with parchment paper or a silicone mat.
  4. Bake: Place the baking sheet in the preheated oven and bake for 20 minutes, or until the meatballs are cooked through and golden brown.
  5. Add Sauce and Cheese: Remove the meatballs from the oven and pour enchilada sauce generously over them. Sprinkle the shredded cheese on top.
  6. Melt Cheese: Return the meatballs to the oven and bake for an additional 5 minutes, or until the cheese is melted and bubbly.
