Egg Quesadilla Recipe

  • Author: Katherine

Ingredients

Scale

  • 2 large eggs
  • 1 whole wheat tortilla
  • 1/2 cup shredded cheese (cheddar or your choice)
  • 1/4 cup diced bell pepper (optional)
  • 1/4 cup chopped spinach (optional)
  • Salt and pepper to taste
  • Cooking spray or a little olive oil

Instructions

  1. Whisk the Eggs:
In a bowl, whisk the eggs, adding salt and pepper to taste. This step is crucial for achieving a fluffy texture.
  2. Prepare the Skillet:
Heat a nonstick skillet over medium heat and lightly grease it with cooking spray or olive oil. This will prevent the eggs from sticking and ensure even cooking.
  3. Cook the Eggs:
Pour the whisked eggs into the skillet and cook until just set, stirring occasionally. This should take about 3-4 minutes.
  4. Assemble the Quesadilla:
On one half of the tortilla, sprinkle the shredded cheese, followed by the cooked eggs. Add any vegetables you like, such as bell peppers or spinach, for added flavor and nutrition.
  5. Fold and Cook the Quesadilla:
Fold the tortilla in half to enclose the filling. Place it back in the skillet and cook until the cheese melts and the tortilla is golden brown, about 2-3 minutes per side.
  6. Serve:
Slice the quesadilla into wedges and serve warm. You can enjoy it with salsa or avocado if desired for an extra burst of flavor.
