- 1 pound ground beef or turkey
- 1 cup breadcrumbs
- 1 egg
- 2 cups beef broth
- 1 can diced tomatoes (14 oz)
- 1 onion, chopped
- 2 carrots, sliced
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh parsley for garnish
Instructions
- Prepare the Meatballs:
- In a bowl, mix the ground meat, breadcrumbs, egg, salt, and pepper until well combined.
- Form the mixture into small meatballs, about 1 inch in diameter.
- Brown the Meatballs:
- Heat olive oil in a large pot over medium heat.
- Add the meatballs to the pot and brown them on all sides. Once browned, remove the meatballs from the pot and set them aside.
- Sauté the Vegetables:
- In the same pot, add the chopped onion, sliced carrots, and minced garlic.
- Sauté the vegetables until they are softened, about 5 minutes.
- Simmer the Stew:
- Stir in the beef broth, diced tomatoes, dried oregano, and Italian seasoning.
- Bring the mixture to a simmer.
- Cook the Meatballs:
- Return the browned meatballs to the pot.
- Cook for 20 minutes, or until the meatballs are cooked through.
- Serve:
- Garnish with fresh parsley before serving.
