Delicious Meatball Stew Recipe

  • 1 pound ground beef or turkey
  • 1 cup breadcrumbs
  • 1 egg
  • 2 cups beef broth
  • 1 can diced tomatoes (14 oz)
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley for garnish

Instructions

  1. Prepare the Meatballs:

    • In a bowl, mix the ground meat, breadcrumbs, egg, salt, and pepper until well combined.
    • Form the mixture into small meatballs, about 1 inch in diameter.

  2. Brown the Meatballs:

    • Heat olive oil in a large pot over medium heat.
    • Add the meatballs to the pot and brown them on all sides. Once browned, remove the meatballs from the pot and set them aside.

  3. Sauté the Vegetables:

    • In the same pot, add the chopped onion, sliced carrots, and minced garlic.
    • Sauté the vegetables until they are softened, about 5 minutes.

  4. Simmer the Stew:

    • Stir in the beef broth, diced tomatoes, dried oregano, and Italian seasoning.
    • Bring the mixture to a simmer.

  5. Cook the Meatballs:

    • Return the browned meatballs to the pot.
    • Cook for 20 minutes, or until the meatballs are cooked through.

  6. Serve:

    • Garnish with fresh parsley before serving.
