Cottage Cheese and Smoked Salmon Toast Recipe

Ingredients

  • Bread: 4 slices of your favorite artisan bread (sourdough, whole grain, rye, or a good quality multigrain work beautifully). Aim for slices about ½-inch thick.
  • Cottage Cheese: 1 cup (approx. 225g) full-fat or low-fat cottage cheese. Good quality, creamy cottage cheese makes a difference.
  • Smoked Salmon: 4-6 ounces (approx. 110-170g) high-quality smoked salmon, thinly sliced (Nova lox is a great choice).
  • Fresh Dill: 2 tablespoons, finely chopped, plus extra sprigs for garnish.
  • Fresh Chives: 1 tablespoon, finely chopped (optional, but recommended for an extra layer of mild onion flavor).
  • Lemon: 1 medium lemon – you’ll use both the zest (about 1 teaspoon) and juice (about 1-2 teaspoons).
  • Black Pepper: Freshly cracked, to taste.
  • Extra Virgin Olive Oil: A light drizzle for finishing (optional).
  • Optional Garnishes:

    • Capers: 1-2 teaspoons, rinsed and drained.
    • Thinly Sliced Red Onion: A few slivers for a pungent kick.
    • Microgreens or Arugula: For added peppery notes and visual appeal.
    • Everything Bagel Seasoning: For an extra pop of flavor and crunch.


Instructions

  1. Prepare the Aromatics:

    • Finely chop the fresh dill and chives (if using).
    • Zest the lemon, ensuring you only get the yellow part, not the bitter white pith. Then, cut the lemon in half for juicing later.

  2. Toast the Bread:

    • Toast your bread slices to your desired level of crispness. A golden-brown, crunchy exterior is ideal. You can use a toaster, a grill pan, or even broil them in the oven (watch carefully to prevent burning).

  3. Mix the Cottage Cheese (Optional Step for Enhanced Flavor):

    • In a small bowl, gently combine the cottage cheese with half of the chopped dill, half of the chopped chives (if using), and about half of the lemon zest. Season lightly with a pinch of black pepper. This step infuses the cottage cheese with flavor, but you can also layer these ingredients directly if short on time.
    • Pro Tip: For an ultra-creamy base, you can whip the cottage cheese in a small food processor or with an immersion blender until smooth before adding the herbs and zest.

  4. Assemble the Toast:

    • Once the bread is toasted, lay the slices on a cutting board or plates.
    • Spread a generous layer of the cottage cheese mixture (or plain cottage cheese if you skipped step 3) evenly over each slice of toast.
    • Artfully arrange the slices of smoked salmon on top of the cottage cheese. You can drape them, fold them, or create little rosettes.

  5. Garnish and Finish:

    • Sprinkle the remaining chopped dill, chives (if using), and lemon zest over the salmon.
    • Squeeze a little fresh lemon juice (about 1/4 to 1/2 teaspoon per toast, to taste) over each assembled toast.
    • Add a few grinds of freshly cracked black pepper.
    • If using, scatter capers and/or thinly sliced red onion over the top.
    • For an extra touch of richness and shine, drizzle very lightly with extra virgin olive oil.
    • Garnish with a few small sprigs of fresh dill or microgreens if desired.

  6. Serve Immediately:

    • This toast is best enjoyed right away while the bread is still warm and crisp, and the toppings are cool and fresh.
