- 2 tsp vanilla extract
- 2 tsp cinnamon
- Zest of 1 lemon

- Extra sugar and cinnamon for topping
Instructions
- Preheat the Oven: Start by preheating your oven to 350°F (175°C).
- Prepare the Bread: Cut the slices of bread into 1-inch cubes and place them in a large bowl.
- Mix the Wet Ingredients: In another bowl, whisk together the eggs, milk, sugar, vanilla extract, cinnamon, and lemon zest.
- Combine the Mixtures: Pour the egg mixture over the bread cubes. Stir gently until all the bread pieces are well-coated and soaked in the mixture.
- Prepare the Muffin Tin: Grease a muffin tin with the melted butter to ensure the muffins don’t stick.
- Fill the Muffin Cups: Evenly distribute the soaked bread mixture into each cup of the muffin tin.
- Add the Topping: Mix some extra sugar and cinnamon, then sprinkle this mixture generously over the top of each muffin.
- Bake: Place the muffin tin in the oven and bake for 20-25 minutes until the muffins are golden brown and set.
