  • 3 large eggs
  • 1 cup milk (or non-dairy milk)
  • 1/4 cup sugar
  • 2 tsp vanilla extract
  • 2 tsp cinnamon
  • Zest of 1 lemon
  • 1/4 cup butter (melted)
  • Extra sugar and cinnamon for topping

Instructions

  1. Preheat the Oven: Start by preheating your oven to 350°F (175°C).
  2. Prepare the Bread: Cut the slices of bread into 1-inch cubes and place them in a large bowl.
  3. Mix the Wet Ingredients: In another bowl, whisk together the eggs, milk, sugar, vanilla extract, cinnamon, and lemon zest.
  4. Combine the Mixtures: Pour the egg mixture over the bread cubes. Stir gently until all the bread pieces are well-coated and soaked in the mixture.
  5. Prepare the Muffin Tin: Grease a muffin tin with the melted butter to ensure the muffins don’t stick.
  6. Fill the Muffin Cups: Evenly distribute the soaked bread mixture into each cup of the muffin tin.
  7. Add the Topping: Mix some extra sugar and cinnamon, then sprinkle this mixture generously over the top of each muffin.
  8. Bake: Place the muffin tin in the oven and bake for 20-25 minutes until the muffins are golden brown and set.
