Chicken Fajita Bowls Recipe

    • 2 chicken breasts, sliced

    • 1 bell pepper, sliced

    • 1 onion, sliced

    • 2 tbsp olive oil

    • 1 tsp chili powder

    • 1 tsp cumin

    • Salt and pepper to taste

    • 1 cup cooked rice or cauliflower rice

    • 1 cup black beans, drained

    • Avocado, diced (optional)

    • Fresh cilantro, chopped (optional)


Instructions

    1. Heat the Skillet
      Begin by heating the olive oil in a skillet over medium heat. This will serve as the base for cooking your chicken and veggies.

    1. Cook the Chicken
      Add the sliced chicken breasts to the skillet. Cook until the chicken is no longer pink, which should take about 5-6 minutes.

    1. Add the Vegetables
      Toss in the sliced bell pepper and onion. Sauté these vegetables until they are tender, approximately 3-4 minutes.

    1. Season the Mixture
      Season the chicken and vegetables with chili powder, cumin, salt, and pepper. Stir well to ensure that everything is evenly coated with the spices.

    1. Assemble the Bowls
      Serve the cooked chicken and vegetable mixture over a bed of rice or cauliflower rice. This forms the heart of your fajita bowl.

    1. Top It Off
      Add a generous serving of black beans on top. If you like, you can also garnish with avocado and fresh cilantro for added flavor and texture.
