- 2 cups pasta (penne or rigatoni)
- 1 cup cooked chicken, diced
- 1 cup smoked turkey sausage, sliced
- 1 can diced tomatoes (14 oz)
- 1 cup bell peppers, chopped
- 1 cup shredded cheese (cheddar or mozzarella)
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp Italian seasoning
- Salt and pepper to taste
- Olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- Cook the pasta according to package instructions, then drain.
- In a large skillet, heat olive oil over medium heat. Sauté onion and garlic until softened.
- Add the turkey sausage and cook for about 5 minutes.
- Stir in diced tomatoes, bell peppers, cooked chicken, Italian seasoning, salt, and pepper. Simmer for 5 minutes.
- Mix the pasta with the sausage mixture and half of the cheese. Transfer to a baking dish.
- Top with remaining cheese. Bake for 20-25 minutes until golden and bubbly.
