Chicken and Chorizo Pasta Bake Recipe

  • 2 cups pasta (penne or rigatoni)
  • 1 cup cooked chicken, diced
  • 1 cup smoked turkey sausage, sliced
  • 1 can diced tomatoes (14 oz)
  • 1 cup bell peppers, chopped
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the pasta according to package instructions, then drain.
  3. In a large skillet, heat olive oil over medium heat. Sauté onion and garlic until softened.
  4. Add the turkey sausage and cook for about 5 minutes.
  5. Stir in diced tomatoes, bell peppers, cooked chicken, Italian seasoning, salt, and pepper. Simmer for 5 minutes.
  6. Mix the pasta with the sausage mixture and half of the cheese. Transfer to a baking dish.
  7. Top with remaining cheese. Bake for 20-25 minutes until golden and bubbly.
