Carrot Cake with Cream Cheese Frosting Recipe

      Cream Cheese Frosting:

        • 8 oz cream cheese, softened

        • 1/2 cup butter, softened

        • 4 cups powdered sugar

        • 1 tsp vanilla extract


Instructions

Step 1: Preheat the Oven

    1. Preheat your oven to 350°F (175°C).

    1. Grease two 9-inch round cake pans to prevent sticking.

Step 2: Mix Wet Ingredients

    1. In a large mixing bowl, combine the grated carrots, sugar, brown sugar, and vegetable oil.

    1. Add the eggs and beat the mixture until well combined.

Step 3: Combine Dry Ingredients

    1. In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, cinnamon, and salt.

Step 4: Combine Mixtures

    1. Gradually add the dry ingredients to the wet mixture, stirring continuously until the batter is smooth.

    1. If desired, fold in the chopped walnuts for added texture and flavor.

Step 5: Bake

    1. Divide the batter evenly between the prepared cake pans.

    1. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center of the cakes comes out clean.

    1. Allow the cakes to cool completely on a wire rack before frosting.

Step 6: Make the Frosting

    1. In a medium-sized bowl, beat the softened cream cheese and butter together until smooth and creamy.

    1. Gradually add the powdered sugar and vanilla extract, mixing until well combined and free of lumps.

Step 7: Frost the Cake

    1. Once the cakes are completely cooled, spread a generous layer of cream cheese frosting on top of one cake layer.

    1. Place the second cake layer on top and frost the top and sides evenly.

    1. For a decorative touch, sprinkle additional chopped walnuts or shredded carrots on top.
