Baked Cottage Cheese Eggs Recipe

  • 1 cup cottage cheese
  • 4 large eggs
  • 1/2 cup chopped spinach
  • 1/4 cup diced bell peppers
  • Salt and pepper to taste
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Optional: shredded cheese for topping

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix together the cottage cheese, eggs, spinach, bell peppers, garlic powder, onion powder, salt, and pepper until well combined.
  3. Pour the mixture into a greased baking dish.
  4. Top with shredded cheese if desired.
  5. Bake for 25-30 minutes or until the eggs are set and lightly golden.
  6. Let cool for a few minutes before slicing and serving.
