Ingredients
Scale
- 1 lb ground turkey
- 2 medium zucchinis, chopped
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 tsp Italian seasoning
- Salt and pepper, to taste
- 1 tbsp olive oil
- 1 cup diced tomatoes, canned or fresh
- Grated cheese (optional)
Instructions
- Heat the Olive Oil: In a large skillet, heat the olive oil over medium heat until it shimmers.
- Sauté the Garlic: Add the minced garlic to the skillet and sauté for about 1 minute, or until it becomes fragrant.
- Cook the Ground Turkey: Stir in the ground turkey, breaking it up with a spatula. Cook until it’s browned and no longer pink, about 5-7 minutes.
- Add Vegetables and Seasoning: Incorporate the chopped zucchini, diced bell pepper, Italian seasoning, salt, and pepper into the skillet. Stir well and cook for about 5 minutes, stirring occasionally to ensure even cooking.
- Stir in the Tomatoes: Add the diced tomatoes to the skillet and mix well. Allow the mixture to simmer for an additional 5 minutes, ensuring all ingredients are well combined and heated through.
- Serve and Enjoy: Serve the skillet hot, optionally topped with grated cheese for an extra layer of flavor.
