Preparation
- Preheat to 400°F and line a sheet pan with foil or parchment for easy cleanup.
- In a bowl, whisk honey, Dijon, olive oil, garlic, salt, and pepper into a glossy glaze, then add chicken thighs, tossing until every piece is thoroughly coated.
- Place coated chicken skin-side up on one half of the sheet pan, spacing pieces about 1" apart.
- In the bowl, toss green beans with olive oil, salt, and pepper until lightly coated, then spread them on the other half of the pan in a single layer.
- Bake at 400°F for 25–30 minutes until chicken reaches 165°F, skin is golden-brown, and green beans are tender-crisp.
- If desired, switch to broil and cook 2–3 minutes to intensify chicken skin’s color, watching closely.
- Let chicken rest 5 minutes; sprinkle with lemon zest and chopped herbs for bright flavor and color.
