Stuffed Pork Roast Recipe

  • 2 lb pork loin
  • 1 cup spinach, chopped
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup sun-dried tomatoes, chopped
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Preheat the Oven: Set your oven to 375°F (190°C) to ensure it’s ready for roasting.
  2. Butterfly the Pork Loin: Carefully slice the pork loin open lengthwise, being mindful not to cut all the way through. This creates a pocket for the stuffing.
  3. Prepare the Filling: In a bowl, mix together the chopped spinach, crumbled feta cheese, sun-dried tomatoes, minced garlic, dried oregano, salt, and pepper.
  4. Stuff the Pork: Evenly spread the prepared filling inside the opened pork loin. Roll the pork tightly around the filling and secure it with kitchen twine to hold its shape.
  5. Season the Pork: Rub the outside of the rolled pork loin with olive oil, salt, and pepper to enhance its flavor.
  6. Roast the Pork: Place the stuffed pork loin on a baking dish and roast in the preheated oven for 45-60 minutes, or until the internal temperature reaches 145°F (63°C).
  7. Rest Before Serving: Allow the pork to rest for about 10 minutes before slicing. This helps retain its juices and ensures tenderness.
