- 1 cup spinach, chopped
- 1/2 cup feta cheese, crumbled
- 1/4 cup sun-dried tomatoes, chopped
- 2 cloves garlic, minced
- 1 tsp dried oregano

Instructions
- Preheat the Oven: Set your oven to 375°F (190°C) to ensure it’s ready for roasting.
- Butterfly the Pork Loin: Carefully slice the pork loin open lengthwise, being mindful not to cut all the way through. This creates a pocket for the stuffing.
- Prepare the Filling: In a bowl, mix together the chopped spinach, crumbled feta cheese, sun-dried tomatoes, minced garlic, dried oregano, salt, and pepper.
- Stuff the Pork: Evenly spread the prepared filling inside the opened pork loin. Roll the pork tightly around the filling and secure it with kitchen twine to hold its shape.
- Season the Pork: Rub the outside of the rolled pork loin with olive oil, salt, and pepper to enhance its flavor.
- Roast the Pork: Place the stuffed pork loin on a baking dish and roast in the preheated oven for 45-60 minutes, or until the internal temperature reaches 145°F (63°C).
- Rest Before Serving: Allow the pork to rest for about 10 minutes before slicing. This helps retain its juices and ensures tenderness.
