Potato Veggie Casserole Recipe

  • 4 large potatoes, sliced
  • 2 cups mixed vegetables (e.g., carrots, broccoli, bell peppers)
  • 1 onion, chopped
  • 2 cups vegetable broth
  • 1 cup shredded cheese (your choice)
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large baking dish, layer half of the potato slices.
  3. Add half of the mixed vegetables and onions on top.
  4. Sprinkle with garlic powder, paprika, salt, and pepper.
  5. Repeat the layers with the remaining potatoes and veggies.
  6. Pour vegetable broth over the top and cover with foil.
  7. Bake for 30 minutes, then remove foil and add cheese on top.
  8. Bake for an additional 15 minutes until cheese is bubbly and golden.
  9. Let cool for a few minutes before serving.
