One-Pot Lemon Herb Chicken and Rice Recipe

Ingredients

  • Chicken Thighs or Breasts: 1.5 pounds, skinless and boneless
  • Olive Oil: 2 tablespoons
  • Garlic: 4 cloves, minced
  • Chicken Broth: 3 cups
  • White Rice: 1.5 cups, uncooked
  • Lemon Juice: 1/4 cup, freshly squeezed
  • Lemon Zest: Zest of 1 lemon
  • Fresh Herbs:

    • Rosemary: 1 tablespoon, chopped
    • Thyme: 1 tablespoon, chopped
    • Parsley: 1 tablespoon, chopped

  • Salt: 1 teaspoon
  • Black Pepper: 1/2 teaspoon
  • Onion: 1 medium, finely chopped
  • Butter: 2 tablespoons
  • Optional Garnishes:

    • Lemon slices
    • Extra parsley


Instructions

  1. Prepare the Chicken: Season the chicken thighs or breasts with salt and black pepper evenly on both sides.
  2. Sear the Chicken: In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the chicken pieces and sear each side for about 4-5 minutes until golden brown. Remove the chicken from the pot and set aside.
  3. Sauté the Aromatics: In the same pot, add butter and let it melt. Add the chopped onion and sauté until translucent, about 3-4 minutes. Add the minced garlic and sauté for another minute until fragrant.
  4. Add the Rice: Stir in the uncooked rice, mixing it with the aromatics to coat the grains.
  5. Incorporate the Liquid: Pour in the chicken broth, lemon juice, and lemon zest. Stir the mixture well to combine all ingredients.
  6. Add Herbs: Mix in the chopped rosemary and thyme. This will infuse the rice with aromatic flavors.
  7. Return the Chicken: Place the seared chicken back into the pot, nestling it into the rice mixture.
  8. Simmer: Cover the pot with a lid and reduce the heat to low. Allow the dish to simmer for about 20-25 minutes, or until the rice is tender and the chicken is cooked through.
  9. Final Touches: Once cooked, remove the pot from heat. Let it sit covered for another 5 minutes to allow the flavors to meld together. Sprinkle the dish with fresh parsley before serving.
