Instructions
- Prepare the Chicken: Season the chicken thighs or breasts with salt and black pepper evenly on both sides.
- Sear the Chicken: In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the chicken pieces and sear each side for about 4-5 minutes until golden brown. Remove the chicken from the pot and set aside.
- Sauté the Aromatics: In the same pot, add butter and let it melt. Add the chopped onion and sauté until translucent, about 3-4 minutes. Add the minced garlic and sauté for another minute until fragrant.
- Add the Rice: Stir in the uncooked rice, mixing it with the aromatics to coat the grains.
- Incorporate the Liquid: Pour in the chicken broth, lemon juice, and lemon zest. Stir the mixture well to combine all ingredients.
- Add Herbs: Mix in the chopped rosemary and thyme. This will infuse the rice with aromatic flavors.
- Return the Chicken: Place the seared chicken back into the pot, nestling it into the rice mixture.
- Simmer: Cover the pot with a lid and reduce the heat to low. Allow the dish to simmer for about 20-25 minutes, or until the rice is tender and the chicken is cooked through.
- Final Touches: Once cooked, remove the pot from heat. Let it sit covered for another 5 minutes to allow the flavors to meld together. Sprinkle the dish with fresh parsley before serving.
