BBQ Chicken with Potatoes Recipe

  • Author: Katherine

Ingredients

Scale

  • 4 chicken thighs or breasts: Choose your preference; thighs tend to be juicier while breasts are leaner.
  • 2 cups baby potatoes, halved: Ensure they are evenly cut to cook uniformly.
  • 1 cup barbecue sauce: Store-bought or homemade, depending on your time and resources.
  • 2 tablespoons olive oil: For coating the potatoes and adding flavor.
  • 1 teaspoon garlic powder: Adds a subtle yet aromatic flavor.
  • Salt and pepper to taste: Essential for seasoning.
  • Fresh parsley for garnish (optional): For that final touch of color and freshness.

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare the potatoes.
In a large bowl, toss the baby potatoes with olive oil, garlic powder, salt, and pepper until they are well-coated.
  3. Prepare the chicken.
Place the chicken thighs or breasts in a separate bowl and coat them thoroughly with the barbecue sauce.
  4. Assemble the dish.
In a baking dish, arrange the seasoned potatoes and place the barbecue-coated chicken on top.
  5. Bake it.
Place the baking dish in the preheated oven and bake for 30-35 minutes, or until the chicken is cooked through and the potatoes are tender.
  6. Final touches.
Once cooked, drizzle some extra barbecue sauce over the chicken and garnish with fresh parsley before serving.
